Generally one or two of these options is sufficient to add to the magic of the day, without overdoing it.
I also suggest checking with ceremony officials as to any guidelines they may have, as well.

Highland daywear attire is standard, which includes kilt, black jacket & tie, etc.
Please bear in mind that outdoor piping can sound less than optimal when temperatures drop into the 40's or less.

Finally, it's good advice to avoid total surprises. By this I refer to hiring a piper as a surprise for the bride and groom. When the bride or groom do this for the other, it's no problem, but when a relative or friend decides to surprise them both, it may be un-welcome. It's best to avoid embarrassment and consult with either the bride or groom first to be sure it's acceptable.
